Free-Range Duck Eggs- AVAILABLE NOW!


Our hens are allowed to free-range forage and they are also fed a diet of USDA certified organic layer feed with no-corn or soy ingredients. They get treats daily of fresh greens and oats. Our eggs are collected daily and kept cool until delivery. We do not wash the eggs at collection time as doing so removes the protective coating and shortening the using time. We do dry brush them to remove bedding debris.


NOTE: Eggs are available for pick-up, shipping, or delivery by arrangement. WASH THE EGGS WITH COOL WATER JUST BEFORE EATING OR USING FOR BAKING. STORE EGGS IN FRIDGE. CONSUME WITHIN 2-WEEKS. DISCARD OR COMPOST OLD EGGS.


In Baking:

Eggs are fantastic in baking. Duck eggs are used by French chefs in baking to give goods a rich flavor. Using them in cakes imparts fluffier and lighter cakes that rise higher compared with those made with chicken eggs. They add density and richness to flourless cakes, pound cakes, and custards. Duck eggs are about 30% larger than a regular sized chicken egg. As a general rule, 2 duck eggs = 3 chicken eggs. However, if the duck eggs are about the same size as a chicken egg a 1:1 ratio can be used. When cracking, be mindful that duck egg shell are much thicker than chicken eggs.
