A staple micro-green marked by its tiny vibrant green cotyledons contrasted by stalks of white. For plating, broccoli micro-greens pair nicely with more colorful micros such as radish rambo and purple radish. They can also be used solo to add texture and interest to dishes.
The little leaves are packed with nutrition. Including concentrated levels of vitamins A, B, C, and E, the minerals calcium, copper, iron, magnesium, phosphorous, and zinc. Broccoli micro-greens have a flavor much like the full grown version. Slight bitter flavor is balanced by an earthy finish.
